事实证明今天早上超级的晕。
到公司后发现没有带家里的钥匙。也就是说,家里的门没有锁。不怕被盗,但晚上回去会进不了第一道公共门。万般郁闷的返回家里。蓝色的情绪中,回忆起1个小时前,电车上的一个瞬间:
电车门关闭的瞬间,俺冲了进去,在我冲入前的0.01s, 站在门口的一个胖哥哥敏捷的用脚轻挡了一下车门。一个无人会看到的动作,让我感动不已。电车出发后,俺整理好零乱的呼吸,偷偷的打量这个胖哥哥。他还是稳稳得站在那里,特有安全感,穿一件白色法拉利广告夹克。俄哦哦哦,刚才换车的途中我就注意过这件夹克,原来是它的主人。觉得满好笑的感觉瞬间被好感取代,就觉得白色的很纯洁,法拉利得很时尚,哥哥很NICE.

排骨是我的最爱,所以经常是俺家饭桌的主角,通常我就以这三种吃法为主,最近拍片纪录,贴上来共享。
豆豉排骨
豉香,蒜香加肉香。做法很简单。四百克排骨先用酱油腌一会儿,剁蒜蓉两瓣,剁豆豉一汤勺,放入腌过的排骨里,加一勺色拉油,和排骨搅拌均匀,再加淀粉一勺,拌匀,放入高压锅里,上气后,中火蒸十八到二十分钟,停火等降温后,揭盖,将排骨装盘并浇上豉汁若干就可以上桌了,吃了还想吃,是这个菜的特点。
粉蒸排骨
我不太喜欢买来的米粉味,因为里边的五香粉味过重,米粉也不够新鲜,我是自己将买来的米粉炒过,再加一点点五香粉和花椒粉制成,为了有个好口感加点炒好的碾碎的糯米做调剂。做法也是先用盐,酱油,红腐乳汁,姜沫,胡椒粉和料酒将排骨腌半个小时,再将米粉拌抹在排骨上,用高压锅蒸,上气后中火十八到二十分钟即可。也可以用藕或芋头篇做底。红腐乳的色和香非常诱人。
糖醋排骨
香甜可口,冷热皆宜。糖醋排骨的做法很多,我是采用了落花飘零那里的做法后就再没有变过,一种保证品质且操作不难的好方法。做法写得长,耐性看完并实施,万无一失,强力推荐。我身边的一个朋友吃了以后总和我提起这款佳肴。做法附在最后。
香米炒饭 其实炒饭用香米是最合适的,因为香米蒸出来散,正好是炒饭所要求的,不然只能用凉米饭了。最近在一家巴基斯坦人的食堂吃着了馕和咖喱饭,看见有卖巴国香米就买来一小包尝鲜,好像比泰国香米还好。方法和通常炒饭一样,热油,放火腿,鸡蛋和葱,稍等片刻再放入米饭翻炒,加少许盐和胡椒,翻炒出锅。
最后再加个素炒红绿椒,看起来爽一些。

糖醋排骨 转自落花飘零
| 原料:排骨(剁好的)1斤 配料:姜3大片(拍松),冰糖 2大匙(20小粒),醋 少许,酱油 少许,料酒3大匙 做法: 1、排骨洗净后,放在碗里,用凉水泡1小时,目的是去血水。然后捞出控干,加少许白糖、料酒和酱油醃半小时,沥干水分备用。 2、锅里放比平常炒菜多一倍的油,大火烧油,油热后,下醃好的排骨,转成中火快翻, 直至排骨断生,部份边角出现金棕色(注意不是深棕色,否则排骨会变柴)。这个过程,只能用中火,要不停的翻,手会酸,要坚持。 3、此时,下姜片,料酒,醋,冰糖,少量老抽(注意,糖醋比例应是糖多醋少,但量要大,可以在烹煮中间再调味),加少量水(以盖住大部分排骨为宜,水不可太多)。然后盖上盖,用中小火煮,期间不时翻动。 4、大约20分钟后,汤汁会明显变稠,排骨也熟了,这时要保持中火,用铲子不停的翻、翻、翻,直到汤汁快收干,能拨出一点点糖丝的时候,油亮的糖醋排骨就告成了。 注: 1、一般的糖醋排骨都是要用油炸的,麻烦不说,炸完的油也不好处理。这个改良做法,不用油炸,也比较省事儿,适合在家庭中推广。 2、用凉水泡排骨可以比较有效的去除排骨中的血水,不可省略。千万不要用沸水预先氽烫排骨,否则排骨不但不容易入味儿,口感也不好 3、一定不要放太多的酱油,最多2小匙(10CC),放多了,排骨的颜色就会很黑,红亮的感觉就没有了。 4、糖醋的比例可以按照各人的口味加以改变,煮开后,尝一尝,不够甜就加糖,不够酸就加醋。但不可放盐,因为酱油本身已有咸味,糖醋味道是本菜的主味,太咸就不对了。 5、放冰糖是为了让成菜的颜色更红亮,如果没有,可以用一般的白糖代替,味道是一样的。 6、最后炒糖色,一直要炒到汤汁几乎没有,提起铲子,能挂起一些糖丝为止 。 |
